Heavier armor allows you to shrug off more crits but slows you down on your movement maneuvers. You really see how armor protects on the crit tables. Your hit points basically are covered during character creation and any ranks in Body Development add to them.
Your hit points is the d10 per rank in body development plus your Con bonus etc. Armor basically protects you from criticals/reduces the amount of damage the heavier the armor with chain/plate being the best. You'll get hit more often, but it will be minor compared to being hit in leather. Remember to consider a good defensive bonus as it reduces an opponents to hit roll and in turn reduces the damage you'll sustain no matter what type of armor you wear.
Combat:
GM Determine surprise
Roll initiative
Make any MM/SM needed to get within melee or range.
Open ended d100+Opponent's OB - Your DB = result compared vs armor type/weapon type on combat chart
Same method applies to your own attacks vs an opponent.
